Pad Thai Recipe
Pad thai is preparing by mixing cooked rice stick noodles with scrambled eggs, shrimps and other ingredients

  • Rice stick noodle – 2handfuls
  • Eggs(lightly beaten) – 2nos
  • Shrimp(fresh) – 1 1/2cup
  • Shallots(sliced, Kunjulli) – 2tbsp
  • Radish(salted) – 1tbsp
  • Firm tofu(diced) – 1/2cup
  • Bean sprouts – 2cups
  • Chives(cut into one inch long pieces) – 1/2cup
  • Peanuts(chopped, roasted) – 2tbsp
  • Sugar 2tbsp
  • Pad Thai sauce – 1/2cup
  • Water 4tbsp
  • Oil(For frying) –
  1. For preparing pad thai recipe, first chop finely the cleaned and drained radish.
  2. Add some sugar and mix well to sweeten chopped radish.
  3. Soak rice stick noodles in 4 tbsp warm water for 15 minutes.
  4. Heat 2 tbsp of oil in a pan. Add beaten eggs and scramble it quickly into small pieces. Remove scrambled eggs from pan and keep aside.
  5. Heat 2 tbsp of oil in the same pan. Stir in shrimps and cook in low heat until done. Transfer the cooked shrimp to a vessel and keep aside.
  6. In the remaining oil, saute shallots, radish, tofu and fry until aromatic.
  7. Stir in soaked noodles followed with water. Stir fry for 5 minutes in medium heat until the noodles tend to become soft.
  8. Add 1/2 cup pad thai sauce and mix gently.
  9. Stir in scrambled eggs, cooked shrimps, chives and bean sprouts.
  10. .Stir well for another 3 minutes until everything blends well.
  11. Remove pad thai from fire and transfer the contents to a serving plate. Garnish with roasted peanuts, fresh lime slices and some bean sprouts.
