  • Buttermilk - 1 1/4 cup
  • Butter(melted) - 4 tbsp
  • Sugar(powdered) - 1/4 cup
  • All purpose flour(Maida) - 2 cups
  • Baking powder - 1/2 tsp
  • Baking soda - 1/2 tsp
  • Cinnamon(powdered, Karugapatta) - 1/4 tsp
  • All spice - 1/4 tsp
  • Oil(As reqd) -
  • Salt - 1/4 tsp

Instructions
  1. For preparing pineapple pancakes, preheat a skillet over medium heat and coat the pan with oil.
  2. Blend eggs, buttermilk, butter, pineapple and salt to a fine paste. Pour it into a bowl.
  3. In another bowl combine sugar, maida, baking powder, baking soda, cinnamon and all spice.
  4. Slowly add the blended wet ingredients into the dry ingredients and mix well avoiding lumps.
  5. Pour the batter in 1/4 cup portions into the hot pan. (Should form 5-inch circles)
  6. When the batter stops bubbling and edges begin to harden, flip the pancakes. They should be dark brown. Cook it on both the sides.
  7. Pineapple pancakes are ready. Serve hot.
