  • Coconut milk - 2 1/2 cups
  • Lime leaves - 4 nos
  • Fish sauce - 2 cups
  • Brown sugar - 1 tsp
  • Thai brinjals(halved) - 150 g
  • basil leaves - 2 springs

Instructions
  1. For preparing pork with thai brinjals, heat oil in a vessel.
  2. Add the green curry paste and fry until there is a nice smell.
  3. Stir in half the coconut milk little by little. Cook over low flame for 5 minutes, until the oil begins to separate.
  4. Then add pork, lime leaves, fish sauce, sugar, water and brinjals. Cook and stir in the remaining coconut milk.
  5. Allow it to a simmer and cook until the pork and brinjals are done. Remove it from the flame.
  6. Garnish with basil leaves.
  7. Pork with thai brinjals are ready. Serve hot with noodles.
