  1. For preparing potato and beetroot stir fry, boil some water with salt. Add potato and beetroot. Cook well(do not over cook it). Drain and keep aside.
  2. In a pan, heat oil. Add fennel seeds, fenugreek seeds and garam masala and ginger-garlic paste. Add the cooked potato and beetroot in to it and fry well,
  3. Add coriander powder and sprinkle little salt.
  4. Add onion, green chillies and cilantros.
  5. Mix very well. When all the spices are coated well, remove from flame.
  6. Serve this as a side dish for chappathi as well as curd rice.
  7. Potato and beetroot stir fry is ready.
