  • Coconut milk - 2 1/2 cups
  • Lime leaves - 4 nos
  • Fish sauce - 2 cups
  • Brown sugar - 1 tsp
  • Thai brinjals(halved) - 150 g
  • basil leaves - 2 springs

Instructions
  1. For preparing rabbit with thai brinjals, heat oil in a vessel.
  2. Add the green curry paste and fry until there is a nice smell.
  3. Stir in half the coconut milk little by little. Cook over low flame for 5 minutes, until the oil begins to separate.
  4. Then add the rabbit, lime leaves, fish sauce, sugar and brinjals. Cook for 5 minutes then stir in the remaining coconut milk.
  5. Allow it to a simmer and cook until the rabbit and brinjals are done. Remove it from the flame.
  6. Garnish with basil leaves.
  7. Rabbit with thai brinjals are ready. Serve hot with noodles.
