  • Rice vermicelli - 25 g
  • Capsicum(de-seeded and finely sliced, red, green and yellow) - 50 g
  • Carrot(peeled and finely sliced) - 50 g
  • Courgette(finely sliced) - 50 g
  • Mange touts(finely sliced) - 50 g
  • Baby Corn(finely sliced) - 50 g
  • Pak choi - 50 g
  • Coriander leaves(chopped) - 4 tbsp
  • Lemon juice - 1 tbsp
  • Peanuts(roasted) -

Instructions
  1. For preparing rice vermicelli with mince salad, first cover the rice vermicelli with boiling water then let it cool in the water.
  2. In a pressure cooker, cook the beef mince with water and salt till done. Drain the water and keep it aside.
  3. Meanwhile, shred the pak choi.
  4. Drain the rice vermicelli and put it into a bowl.
  5. To the bowl, add the cooked beef mince, capsicum, carrot, courgette, mange touts, baby corn, pak choi and coriander leaves with required salt.
  6. Pour in the lime juice and sprinkle peanuts.
  7. Rice vermicelli with mince salad is ready.
