Rich Dark Fruit Cake
Rich in prunes, nuts and raisins, A classic cake with a different kind of preparation. Melted butter is added towards the end.

  • Butter – 455gm
  • (melted) –
  • Dates or prunes(finely diced) – 340gm
  • Mixed Fruits(cherries,raisins,sultanas,currants and citrus peels) – 300gm
  • Almonds(chopped) – 50gms
  • Eggs – 10nos
  • Dark brown sugar 300gm
  • Self raising flour – 250gm
  • Plain flour – 120gm
  • Vanilla Essence – 1tsp
  • Baking powder 1tsp
  • Soda powder – 1tsp
  1. Pre-heat the oven at 300F or 150 C.
  2. Boil the dates or prunes in half cup water and simmer till all the water is absorbed but moist. Cool.
  3. Beat together eggs and sugar till light and fluffy. 4)Stir in flour,baking powder, soda powder, Fruits,boiled dates / prunes, nuts and vanilla and stir well to combine.
  4. Pour melted butter slowly and mix everything together.
  5. Pour the cake mix into a greased baking pan (13“ X 9“ pan) and level the top.
  6. Bake at 300 F or 150c for 60 to 70 minutes.
  7. Dust the cake with icing sugar.
