Instructions
  1. For preparing seafood with pineapple, shell and de-vein the prawns, leaving the tail intact.
  2. Break the salmon into large pieces.
  3. Drain the pineapple, reserve 62ml of syrup for dressing.
  4. Combine pineapple syrup, watercress leaves, prawns, salmon, pineapple and capsicums. Take a spoonful of this mixture and place it on to the pre-washed lettuce leaves on a serving plate.
  5. Sprinkle parsley over it.
  6. Combine mayonnaise, cream and tomato sauce in a blender and pour it over just before serving.
  7. Seafood with pineapple is ready. Serve immediately.
