Instructions
  1. For preparing shrimp paste cucumber curry, grind red chillies, lemon grass, garlic, turmeric powder, shrimp paste and cloves. Keep this curry paste aside.
  2. Cook the cucumber in water and salt until done. Drain it and keep it aside.
  3. Heat oil in a vessel. SautT the chopped garlic, salt and onion.
  4. Add in the curry paste and allow it to cook for 2 minutes on low flame.
  5. Pour in the coconut milk and fish stock. Allow it to boil.
  6. Then add in the cooked cucumber and lime leaf. Allow it to cook for another 5 minutes.
  7. Garnish with coriander leaves.
  8. Shrimp paste cucumber curry is ready. Serve hot with cooked basmati rice.
