  • Shrimps(cleaned) - 250 g
  • Onions(chopped) - 2 nos
  • garlic(chopped) - 2 cloves
  • Ginger(chopped) - 1/2 inch
  • Unsalted butter - 3 tsp
  • Leeks - 2 nos
  • Potatoes(250g) - 2 nos
  • Fish stock - 2 1/2 cups
  • Black Pepper Powder - 1/2 tsp
  • Saffron threads - 1/4 tsp
  • Green onions(finely chopped) - 5 nos
  • Salt(As reqd) -

Instructions
  1. For preparing shrimps soup, heat butter in a pan. Saute onions, garlic, ginger and leeks. Cook it for 10 minutes in low flame until the veggies are tender.
  2. Cut shrimps and potatoes into small cubes. Add it to the above pan and allow it cook for 1 minute.
  3. Add in the fish stock and bring it to a boil.
  4. Take another small bowl with saffron threads and crush it with the back of the spoon as much as possible. Take a teaspoon full of the stock and pour it into the saffron. Mix it well.
  5. Pour it back into the soup. Allow it to cook for 5 minutes.
  6. Season with salt and pepper.
  7. Then add in the green onions to the soup. Cook it for another 1 minute.
  8. Shrimps soup is ready. Serve hot.
