Simple Egg Tomato Curry

  1. For preparing simple egg tomato curry, first grind together onion, tomato and garlic cloves to a fine paste.
  2. Heat oil in a pan and add curry leaves and the ground paste.
  3. Fry for 2 minutes until the oil seperates.
  4. Add the powder ingredients: red chilly powder, turmeric powder, coriander powder and required salt.
  5. Add 1/4 cup of water and allow it to boil with a covered lid.
  6. Add hard boiled eggs into the gravy and cook it covered for 5 minutes on low heat till the gravy acquires a required consistency.
  7. Garnish the simple egg tomato curry with chopped coriander and serve hot with chappathis/roti.
