Soup with wakame, tofu and goji berries

  • Goji berries(optional) –
  • Wakame(seaweed) – 3tsp
  • Dashi(stock powder) – 2tsp
  • Miso paste – 2tbsp
  • Tofu(small) – 1packet
  • Water 4cups
  1. Soak goji berries in water for 20 minutes.
  2. Boil water and add goji berries and dashi stock powder to make the basic soup.
  3. In a different bowl, put dry wakame in water for 10 minutes and drain.
  4. Cut tofu into small blocks(e.g. 2X3X1cm). If you prefer bigger, it is also fine.
  5. Add seaweed and tofu into the soup and heat. ß
  6. Dissolve the miso paste in 1/2 cup water and pour over the soup. Switch off the flame.
  7. Pour into bowls as shown in picture and enjoy.
  8. Note:- Goji berries have the highest antioxidant levels compared to any known food source.
