  • Carrots(peeled and cubed) – 2nos
  • Potatoes(peeled and cubed) – 2nos
  • Cauliflower(sliced) – 1cup
  • Green peas 1/2cup
  • Onions(finely sliced) – 2nos
  • Green chillies(slit) – 4nos
  • Ginger(finely chopped) – 2tsp
  • garlic(grated) – 2tsp
  • Tomatoes(chopped) – 2nos
  • Capsicum(de-seeded and cubed) – 1no
  • Pepper powder 2tsp
  • All purpose flour(Maida) – 1cup
  • Corn flour – 1tbsp
  • Cashew nuts(soaked in water and ground to a paste) – 1/2cup
  • Coriander leaves(chopped) – 2springs
  • Oil(As reqd) –
  • Salt(As reqd) –
  1. For preparing special veggie kuruma, in a bowl mix in maida, salt and pepper powder with a little water(avoid lumps).
  2. Heat oil in a vessel.
  3. Dip carrots, cauliflower, potatoes and green peas in the above batter and fry it in oil. Remove it and keep it aside.
  4. In the same oil sautT in the onions and green chillies till the onions become transparent.
  5. Then add in ginger and garlic. Saute it for some time till a nice smell comes.
  6. Now toss in the tomatoes and sautT it for 5 minutes on low flame.
  7. Add in the capsicum along with the fried veggies. Mix it well.
  8. Pour in the cashew nut paste and fry it for 2 minutes on low flame.
  9. In a bowl mix in corn flour with a little water and pour it into the veggies. Stir it.
  10. Pour in 1/2 a cup of water with required salt and allow it to boil till it becomes dry.
  11. Garnish with coriander leaves.
  12. Special veggie kuruma is ready. Serve hot.
