Strawberry Terrine
A colourful dish with red currants and strawberries

  • Strawberries(chopped in 2 halves) – 400g
  • Jelly tablets – 3nos
  • Water 100ml
  • Sugar 80g
  • Frozen red currants – 200g
  • Single cream(cold) – 100g
  1. For preparing strawberry terrine, soak the jelly in cold water.
  2. Boil water and sugar in a saucepan. Allow it to simmer for 5 minutes.
  3. Add in the red currants and leave it to simmer for 1 minute. Remove it from the flame and blend it.
  4. Beat in the drained jelly with a hand whisk and allow it to cool.
  5. Whip the cream until light and fluffy.
  6. Mix in the whipped cream with the redcurrant puree.
  7. Grease the terrain with butter and pour a little red currant puree.
  8. Leave it to set for 5 minutes in the freezer.
  9. Cover it with a layer of strawberries and finish with a layer of cream on top.
  10. Tap the sides of the terrain lightly, so that all the ingredients are evenly spread.
  11. Cover with a lid and chill it for 6-8 hours.
  12. Strawberry terrain is ready. Cut and serve the terrain with strawberry puree.
