Stuffed Brinjal
This is a tasty dish with is very good for health.It is good curry for chappathi,rice and rotti.

  • Brinjals(slit them on four sides without breaking) – 4nos
  • Peanut powder – 1/2cup
  • Onions – 2nos
  • Tomatoes – 2nos
  • Chilli powder 1tsp
  • Peanut powder – 1tsp
  • Turmeric powder 1/4tsp
  • Coriander leaves(chopped) – 1bunch
  • Water 1cup
  • Oil 1tbsp
  1. In a vessel first put peanut powder,chilli powder,turmeric powder and gram masala
  2. Add 1 spoon of water and mix well
  3. Stuff this mix into brinjals.
  4. In a kadai put 1 spoon oil and add onions,tomatoes and saute for 2 minutes add the remaining masala to this
  5. Add stuffed brinjals to this , add salt and saute for a minute.
  6. Add 1 cup water and close kadai with lid.cook for 10 minutes.
  7. Now brinjal becomes soft toss the other side and cook for 2 more minutes until brinjal becomes tender and cooked.Add coriander to this.
  8. Now stuffed brinjal is ready to serve.
