Ingredients
  • Potatoes – 3nos
  • Oil 300ml
  • Chickpea flour(Kadala mavu) – 1cup
  • Rice flour – 1tbsp
  • Corn flour – 1tbsp
  • All purpose flour(Maida) – 1tsp
  • Chilly powder – 1tsp
  • Salt(As reqd) –
  • Asafoetida powder(Kayam) – 1/2tsp
  • Soda Bicarb – 1/2tsp
For stuffing:
  • Onion(finely chopped, big) – 1no
  • Carrot(finely chopped) – 1no
  • Green chillies(finely chopped) – 2nos
  • Ginger(grated) – 1tsp
  • Salt(As reqd) –
  • Pepper powder 1tsp
  • Coriander leaves(finely chopped) – 2springs
  • Juice of lemon – 2tsp
Instructions
  1. For preparing stuffed potato fry, mix all the ingredients for stuffing and keep aside.
  2. Cut the potato in thick halves.
  3. Make the batter of dosa batter consistency by mixing the flours, chilly powder, salt, asafoetida and soda bicarb.
  4. Heat oil in a kadai. Dip each potato slice in the batter and fry till cooked.
  5. Slit the potato halves and stuff the filling material.
  6. Stuffed potato fry. Serve hot.
