  • Boneless duck(chopped) – 300g
  • Unsalted butter – 55g
  • Onion(chopped, big) – 1no
  • Duck stock – 625ml
  • Pepper powder(As reqd) –
  • Tarragon(chopped) – 2tbsp
  • Double cream 150ml
  • Salt(As reqd) –
  1. For preparing tarragon duck soup, cook the duck pieces in salt water, drain it and shred it. Keep it aside.(keep the stock)
  2. Melt the butter in a vessel and fry the onion till it becomes transparent.
  3. Add the duck to the pan with half of the duck stock. Allow it to cook on low flame. Allow it to cool.
  4. Blend it to a fine paste.
  5. Then add the remaining stock and season with salt and pepper.
  6. Garnish the soup with fresh tarragon.
  7. Tarragon duck soup is ready. Serve hot with deep-fried croutons.
