Tasty Tomato Rice
Tomato rice prepared in a simple way

Ingredients
  • Tomatoes(chopped, medium) – 6nos
  • Basmati rice – 2 1/2cup
  • Water 5cups
  • Onion(finely chopped) – 1no
  • Ginger(garlic paste – 2 tbsp) –
  • Green chilly(slit) – 1no
  • Turmeric powder 1/4tsp
  • Fennel seeds powder(Perinjeerakam) – 1/4tsp
  • Pepper powder 1/4tsp
  • Cinnamon(Karugapatta) – 6pieces
  • Bay leaf(Vazhana/Karuga ela) – 2nos
  • Cloves(Grambu) – 6nos
  • Cardamomseeds(Elakka) – 5nos
  • Mace(Jathipathiri) – 2nos
  • Cumin seeds(sajeerakam/biriyani jeerakam) – 1/2tsp
  • Clarified butter/ghee 2tbsp
  • Curry leaves – 10 – 15nos
  • Coriander leaves(chopped) – 2tbsp
  • Pudina leaves(chopped) – 2tbsp
  • Salt(As reqd) –
Instructions
  1. Clean and soak the rice in water for 30 minutes. Drain the water and leave it for drying.
  2. Heat clarified butter or ghee in a pan.
  3. Add cinnamon, bay leaf, cardamom seeds, cumin, cloves and mace.
  4. Add onions and saute till it turns golden brown in color.
  5. Add ginger-garlic paste and sautT for 2 minutes.
  6. Add chopped tomatoes, green chilly, curry leaves and little salt.
  7. Saute until the oil separates.
  8. Add chopped pudina leaves.
  9. Add rice and sautT till rice turns translucent.
  10. Add water and allow it to boil.
  11. When the water comes to a boil, add salt required for rice.
  12. Cover the pan and cook in low flame until the rice is done.
  13. Garnish with coriander leaves. Serve with salad & pickle.
