Instructions
  1. For preparing thai coconut-prawn rice, marinate the prawns with turmeric powder, oyster sauce and pepper powder for 1/2 an hour.
  2. Heat oil in a frying pan and fry the marinated prawns till it becomes light brown in colour. Keep it aside.
  3. Heat the same oil(add more oil if required) in a vessel and gently saute the crushed garlic and finely sliced onions till it becomes transparent.
  4. Add the rice and turmeric powder. Mix well.
  5. Pour in the water and coconut milk.
  6. Toss in the fried prawns, crushed lemon grass, curry leaves, bay leaves and salt.
  7. Allow it to cook on low flame till the liquid has been absorbed completely.
  8. Remove the lemon grass and bay leaves.
  9. Thai coconut-prawn rice is ready. Serve hot with chicken manchurian.
