  • Avocados(ripe) - 2 nos
  • Carrot(peeled and cubed) - 1 no
  • Onion( chopped) - 1 no
  • Chilly flakes - 1/2 tsp
  • *Vegetable Stock - 1 1/2 litre
  • Cream - 170 ml
  • Coriander(chopped) - 2 springs
  • olive oil(As reqd) -

Instructions
  1. For preparing thick avocado veggie soup, heat the olive oil in a vessel and fry the onion for 5 minutes over medium flame.
  2. Add the chilly flakes and fry for 2-3 minutes.
  3. Then add in the potatoes, carrot and vegetable stock. Allow it to simmer till done and then allow it to cool.
  4. Blend the above cooled mixture until it becomes smooth.
  5. Then blend in the avocado, salt and cream.
  6. Garnish with coriander leaves.
  7. Thick avocado veggie soup is ready. Serve chilled.
