  1. Cook rice and allow it to cool by spreading it over a broad plate and mix little ghee so that grains will separate.
  2. Cut onions lengthwise. Cut tomatoes finely and chillies into long pieces. Chop garlic and keep them aside.
  3. Heat oil and ghee(about 1 tsp ghee and 3 tsp oil) in a frying pan.
  4. Add the ingredients for seasoning followed by chillies, garlic and onions. Fry till onions become translucent.
  5. Add tomatoes and cook till it becomes soft.
  6. Add salt, a pinch of sugar and masala powder.
  7. Add rice to this and mix well till rice becomes hot.
  8. Finally, add grated coconut and coriander leaves.
