Instructions
  1. For preparing vegetable rice, heat oil in a pan and splutter mustard seeds.
  2. Toss in the split bengal gram and cashew nuts. Saute till it becomes brown.
  3. Add in the curry leaves, onions and green chillies. Fry it till the onions become golden brown in colour.
  4. Then add turmeric, salt and chilly powder. Saute for a minute.
  5. Stir in the carrot, potato, capsicum, beans and pepper powder. Sprinkle a little water.
  6. Allow the vegetables to cook on low flame with a closed lid.
  7. Add in the cooked green peas and rice.
  8. Pour in the lemon juice and mix well.
  9. Garnish with coriander leaves.
  10. Vegetable rice is ready. Serve hot.
