  • Beans(chopped) - 1/2 cup
  • Cauliflower(chopped) - 1/2 cup
  • Carrot(peeled and chopped) - 1/2 cup
  • Onion(finely chopped, big) - 1 no
  • Tomato(finely chopped, big) - 1 no
  • Turmeric powder - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Coriander leaves(finely chopped) - 5 springs
  • Curry leaves - 1 spring
  • Oil(As reqd) -
To grind:
  • Onion(chopped, big) - 1 no
  • Cumin seeds - 1/2 tsp
  • Cinnamon(Karugapatta) - 1 inch
  • Cloves(Grambu) - 4 nos
  • Pepper corns - 1/2 tsp
  • Chilly powder - 2 tsp
  • Ginger(chopped) - 1/2 inch
  • garlic - 7 cloves
  • Vinegar - 1 1/2 tbsp

Instructions
  1. For preparing veggie masala dry, blend all the ingredients under 'to grind': cumin seeds, cinnamon, cloves, pepper corns and chilly powder to a fine powder.
  2. Add in the onion, ginger, garlic, vinegar and salt and blend it again to a fine paste. Keep it aside.
  3. Heat oil in a deep frying pan and fry the onions, curry leaves, turmeric powder, coriander powder and tomato.
  4. Pour in the ground paste and sautT on low flame till the oil separates.
  5. Toss in the beans, potatoes, cauliflower and carrot. Mix it well and allow it to cook on low flame with required water.
  6. Garnish with coriander leaves and allow it to simmer till the water evaporates.
  7. Veggie masala dry is ready. Serve hot with chapatti.
