Instructions
  1. For preparing zucchini in spicy tomato sauce, cut the ends from the zucchini and then cut them into 1 cm thin slices. Keep it aside.
  2. Heat the oil in a deep frying pan.
  3. Splutter cumin seeds and mustard seeds.
  4. Add in the onion and garlic. Saute for 5 minutes.
  5. Then add turmeric powder, chilly powder, coriander powder, cumin powder and salt. Saute for 2 minutes.
  6. Add the sliced zucchini and cook it for 5 minutes.
  7. Then add in the tomato puree and chopped tomatoes into the pan. Mix well.
  8. Pour water and cover the pan. Allow it to simmer until the sauce thickens.
  9. Stir in the coriander leaves and garam masala. Allow it to cook until the zucchini pieces are tender.
  10. Zucchini in spicy tomato sauce is ready. Serve as a side dish.
