Dry roast the aval until crisp. Roast in low to medium flame. Do not change the colour.
Then pour cold water into it and soak for 10 minutes.
Mean time boil milk.
When it starts to boil, add 25 grams of butter and mix well. Reduce the flame and keep stirring.
Caramelize 25gms of sugar by adding 50g of butter.
Keep the flame low and stir occasionally. Whisk until the butter has melted.
Meantime, add the soaked and drained aval into the boiling milk or payasam.
Combine well and cook for 10 minutes. Keep this aside.
Meanwhile, continue with the process of caramelizing. Lower the heat a bit to keep the sugar from burning.
Pour the caramelised sugar into the payasam.
Add remaining Sugar and stir until they dissolve.
Pour condensed milk and continue stirring.
Finally add the remaining butter .
Add little salt and mix
Cook the aval until it is soft. When the Payasam starts thickening switch off the flame.
Delicious Payasam is now ready to serve.
