For seasoning:

Instructions
Cut eggplant into small pieces.
Heat oil in a pan.
Add all the ingredients for seasoning one by one.
Add chopped onions and fry till translucent.
Add finely cut eggplant and stir fry on a low heat. Don`t cover the pan.
Fry till they are cooked.
Add salt, chilly powder and masala powder and fry for a few minutes.
Add freshly grated coconut and mix well.
:- Serve with plain rice.
