Eggplant/Brinjal stir fry

Ingredients
  

  • 1 no Eggplant (medium) Brinjal/Vazhuthananga
  • 1/2 cup Chopped onion optional
  • 2 tbsp Grated coconut
  • 1 tsp Any masala powder
  • 1 tsp Chilly powder
  • Salt As reqd
  • For seasoning:
  • 2 tbsp Oil
  • Asafoetida A pinch, Kayam
  • 1/2 tsp Turmeric powder
  • Curry leaves A few
  • 1 tsp Mustard seeds
  • 1 tsp Black gram Uzhunnuparippu
  • 2 nos Red /green chillies

Instructions
 

  • Cut eggplant into small pieces.
  • Heat oil in a pan.
  • Add all the ingredients for seasoning one by one.
  • Add chopped onions and fry till translucent.
  • Add finely cut eggplant and stir fry on a low heat. Don`t cover the pan.
  • Fry till they are cooked.
  • Add salt, chilly powder and masala powder and fry for a few minutes.
  • Add freshly grated coconut and mix well.
  • :- Serve with plain rice.
