Cut brinjal to thin round pieces each about 1 cm thick.
Marinate the above with turmeric powder, chilly powder and salt. Keep aside for 10 minutes.
Heat some oil in a pan.
Fry the marinated brinjal pieces till brown. Drain and keep aside.
Heat 1 tbsp oil in a pan.
Splutter mustard seeds.
Add curry leaves and red chillies.
Add onions sliced lengthwise and saute well till light brown.
Add the fried brinjal pieces now.
Add garam masala, pepper powder and salt(only if needed).
Saute well.
Grind together grated coconut, cumin seeds and garlic pods to a paste and add this to the above.
Mix well.
