Brinjal Thoran

A spicy dry dish

Ingredients
  

  • 1 nos Egg Plant/Brinjal 4 - 5 nos for small brinjals, big
  • 1/2 tsp Turmeric powder
  • 1 1/2 tsp Chilly powder
  • 1 tsp Pepper powder
  • 1/2 tsp Garam masala
  • 3 - Grated coconut
  • 2 nos Garlic pods
  • 1/2 tsp Cumin seeds Jeerakam
  • 2 nos Dry red chillies Kollamulaku
  • 1/2 tsp Mustard seeds
  • Curry leaves A few
  • Salt As reqd
  • Oil for frying

Instructions
 

  • Cut brinjal to thin round pieces each about 1 cm thick.
  • Marinate the above with turmeric powder, chilly powder and salt. Keep aside for 10 minutes.
  • Heat some oil in a pan.
  • Fry the marinated brinjal pieces till brown. Drain and keep aside.
  • Heat 1 tbsp oil in a pan.
  • Splutter mustard seeds.
  • Add curry leaves and red chillies.
  • Add onions sliced lengthwise and saute well till light brown.
  • Add the fried brinjal pieces now.
  • Add garam masala, pepper powder and salt(only if needed).
  • Saute well.
  • Grind together grated coconut, cumin seeds and garlic pods to a paste and add this to the above.
  • Mix well.
  • :- Tastes great with rice and rotis
