Buckwheat Noodles
Noodles made of buckwheat flour mixed with tomatoes, rocket leaves and other ingredients

- 250 g Buckwheat/Soba Noodles
- 1 no Fresh red chilly seeded and chopped
- 2 cloves Garlic crushed
- 100 g Rocket leaves shredded
- 1 no Tomato chopped
- 1/2 tbsp Olive oil
For preparing buckwheat noodles, first cook the noodles in boiling water in a pan following the packet instructions.
Drain the buckwheat noodles and set aside.
Heat olive oil in a frying pan and fry the crushed garlic in low heat. Add red chill, rocket leaves and chopped tomato.
Saute and cook for a few minutes until rocket leaves wilt.
Toss the sauted vegetable mixture with cooked buckwheat noodles and serve hot.
