Carrot Potato Green Beans Thoran
Delicious vegetarian preparation of carrot, beans and potato

- 1 no Carrot cut into small pieces, large
- 200 g Beans cut into small pieces
- 1 no Potato cut into small cubes
- 2 nos Green chillies
- Ginger A small piece
- 1/4 tsp Cumin seeds Jeerakam
- 2 nos Whole red chilly
- 1/4 tsp Mustard seeds
- 2 tbsp Coconut grated
- Turmeric powder A pinch
- Curry leaves Few
- 1 no Onion chopped, small
- Salt As reqd
For preparing carrot potato green beans thoran, first put all the cut vegetables in a vessel.
Pour 1/2 cup water, required salt and turmeric. Boil this until all the water has dried up and vegetables have cooked.
Keep this aside. Pound jeera, green chillies, ginger, onion and coconut. Keep aside.
Pour oil in a wok/kadai, heat add add mustard seeds, red whole chillies and curry leaves.
Stir in the vegetable mixture and the pounded coconut mixture.
Saute till water is dry and thoran is done. Enjoy a nutritious thoran.
