Carrot Potato Green Beans Thoran

Ingredients
  

  • 1 no Carrot cut into small pieces, large
  • 200 g Beans cut into small pieces
  • 1 no Potato cut into small cubes
  • 2 nos Green chillies
  • Ginger A small piece
  • 1/4 tsp Cumin seeds Jeerakam
  • 2 nos Whole red chilly
  • 1/4 tsp Mustard seeds
  • 2 tbsp Coconut grated
  • Turmeric powder A pinch
  • Curry leaves Few
  • 1 no Onion chopped, small
  • Salt As reqd

Instructions
 

  • For preparing carrot potato green beans thoran, first put all the cut vegetables in a vessel.
  • Pour 1/2 cup water, required salt and turmeric. Boil this until all the water has dried up and vegetables have cooked.
  • Keep this aside. Pound jeera, green chillies, ginger, onion and coconut. Keep aside.
  • Pour oil in a wok/kadai, heat add add mustard seeds, red whole chillies and curry leaves.
  • Stir in the vegetable mixture and the pounded coconut mixture.
  • Saute till water is dry and thoran is done. Enjoy a nutritious thoran.
