Chambakka Achar, also known as Kerala Style Rose Apple Pickle, is a traditional South Indian delicacy that captures the essence of Kerala’s rich culinary heritage.
Clean, remove seeds, wash and cut Chambakka fruit into medium sized pieces.
Heat about 2 Tsp oil in a cheenachatti/frying pan and add Chambakka pieces into the hot oil. Stir it well occasionally for about five minutes (or till water in the Chambakka pieces are removed completely). Then take out the pieces and transfer into a plate.
Take all the listed spicy ingredients in a plate.
Heat some more oil in the same cheenachatti/frying pan and splutter mustard seeds. Add the green chilli pieces, chopped ginger, garlic and curry leaves. Fry in low flame.
When colour of these ingredients turn into golden/brown, add turmeric powder, kashimiri chilli powder/red chilli powder and about 1/4 Tsp fenugreek powder and stir it well. Add about 1/2 cup of vinegar and required quantity of salt. Boil this mix and then add the Chambakka pieces. Add some sugar also. Stir this mix further for about 2 – 3 minutes and then put off the stove and allow the mix to cool.
