For preparing chicken coconut stir fry, marinate chicken with rice flour, corn flour, turmeric, chilly powder, garam masala, ginger-garlic paste, sugar and curd.
Set aside for 15 minutes.
Fry it in oil and keep aside on tissue to drain oil.
Heat little oil in pan, add mustard seeds and curry leaves.
Add onion, cumin and ginger. Fry for a while.
Add coconut pieces and then capsicum.
Add cashew and fry again.
Add fried chicken strips and mix well.
Serve super hot.
