Chicken Madhooth

Chicken Madhooth is a lesser-known yet incredibly delicious chicken dish that is packed with bold flavors and rich spices.

Ingredients
  

  • 1 Cup Sunflower Oil
  • 1 Kg Chicken
  • 1 kg Basmati rice
  • 2 Nos. Onion
  • 1 No. Tomato
  • 1 Tsp ginger Crushed
  • 1 Tsp Garlic Crushed
  • 3 Nos. Green chilly
  • 1 Nos. Capsicum
  • 1/2 Cup Tomato puree
  • 2 Nos. Cardamom
  • 3 Nos. Clove
  • 1 Piece Cinnamon stick Karugapatta
  • 1 No. Dried Onion
  • 2 Tbsp Arabic Masala
  • 1 Tsp Pepper corns
  • Salt As reqd

Instructions
 

  • Heat oil in a heavy bottomed pot.
  • Add onion and sauté till transparent.
  • Then add crushed ginger garlic.
  • Add spices.
  • Add green chilly, chopped tomato and capsicum.
  • Add dried onion and saute for 5 minutes.
  • Then add tomato puree.
  • Cook for few minutes till the oil appears on the top.
  • Add the cleaned chicken and salt as required.
  • Add arabic masala and saute in high flame for about 5 minutes by flipping over the pieces.
  • Add boiling water to this and mix well.
  • Add pepper corns.
  • When the water starts to boil, add washed and drained rice.
  • Cover and cook on medium flame till all the water is absorbed and rice is well cooked.
  • Delicious Chicken madhooth is ready now.
