Dahi Baingan Curry
Dahi Baingan can be eaten by itself, with plain, fragrant boiled rice and even with Chapatis. it gives good taste and flavor of this recipe is too good.

Dahi 1/2 cup Egg plant 1 no. ( large) onion 1 no. tomato 1 no. oil 5 tsp cumin seed 1/5 tsp fennel seed 1/5 tsp mustard 1/2 tsp broken urad dal 1/5 tsp lemon 1/2 no. red chili powder 1/2 tsp salt to taste
roast the egg plant directly to the flame
in the same way roast the onion and tomato too individualy
add the roasted egg plant, tomato and onion in a bowl and smash it and add lemon juice and mix it
heat the oil in a pan and temper the mustard, broken urad dal, fennel seed and cumin seed
add the smashed egg plant and mix well
add curd mix it
salt and red chili powder and mix well
allow to cook for 2 mins in low flame
