Pomfret or garoupa is ideal, whole

Corn flour
Salt
As reqd
Pepper
As reqd

Spring onion

Light soy sauce

Dark soy sauce

tsp
Chinese Wine

tsp
Fish sauce
Instructions
Marinate fish with salt and pepper.
Sprinkle the cornflour on the fish and keep for 5 mins.
Heat oil in a pan.
Fry the fish, till lightly brown on both sides.
Drain and remove.
Heat up the the remaining oil.
Add ginger and fry.
Add all the sauces and 3 tbsp of water.
Allow it to boil.
Pour the above over the fried fish.
Garnish with spring onion.
