Easy And Yummy Kara Kolambu

Ingredients
  

  • 5 nos Brinjal cut in to cubes
  • 100 g Shallots peeled, kunjulli
  • 3 cloves Garlic crushed
  • 2 nos Tomatoes chopped
  • 1 tsp Chilly powder
  • Turmeric Powder A pinch
  • 1 tsp Sambar powder
  • Tamarind A small ball, puli
  • Curry Leaves Few
  • Mustard seeds Few

Instructions
 

  • Take some oil in a kadai and add mustard seeds. After it splutters, add some curry leaves.
  • Add peeled small onions, brinjal and garlic. Saute them till onion and garlic is getting cooked.
  • Add some chopped tomatoes, a pinch of turmeric powder, chilly powder and sambar powder.
  • Keep continuously stirring.
  • Add some water to the tamarind and squeeze the pulp. Add this pulp to the curry and continue stirring.
  • Boil this mixture properly and serve hot with rice.
