Chop mutton into bite sized pieces. Wash well and drain. Add mutton pieces to a pressure cooker.
Put the ingredients one by one - onion, tomato, ginger, chilly powder and required salt into the cooker. Mix well and cook for 25 minutes. If the meat is tough, it may take longer time to cook. Keep this aside.
To Make Ground Masala:
Heat 1 tsp oil in a pan. Add 1 cup grated coconut.
Fry till it becomes brown.
Reduce heat and stir in 1 tbsp chilly powder followed by 2 tbsp coriander powder.
Add 1/2 tsp fennel seeds or perumjeerakam. Keep stirring.
Add 1/2 tsp cumin seeds and 1 tbsp pepper corns.
Add 5 cloves(Grambu) followed by few small pieces of cinnamon. Roast it until a nice aroma comes.
Grind the roasted masala mixture without adding water. Add this ground mixture into the cooked mutton. Mix well and cook in medium flame until the gravy thickens.
For Seasoning:
Meanwhile, take a pan and heat 1 tbsp ghee. Splutter mustard seeds.
Add 4 sliced shallots and fry.
Add curry leaves and brown it.
Pour the seasoning into the thick mutton gravy which is on low flame. Add some coriander leaves. Mix well and switch off.
Enjoy the thick mutton gravy with rice or paratha.
