For preparing egg and potato pizza, boil water in a vessel.
Once the water starts to boil, add the grated potatoes. Let it boil on high flame for 5 minutes. Drain and add cold water. Keep aside.
Beat the eggs, add salt and pepper. Keep it aside.
Then take a frying pan, put about 1 tbsp oil. Slowly spread the grated and boiled potato on the hot pan.
Make a thin sheet of grated potato. Let it fry till slightly brown. Put more drops of oil if required.
Once slightly brown, pour one ladle of egg mixture on top of the potato. Let it cook in low flame.
Slowly spread a bit of onions, ginger, spring onions and green chillies.
Once the egg gets cooked under, flip and turn to the other side till it gets nice and golden.
Egg and potato pizza is ready. Serve hot with tomato sauce.
