Ingredients
  

  • 2 nos. Boiled Eggs
  • 2 nos. Onion(Sliced lengthwise)
  • 3 nos. Potatoes(Boiled & Mashed)
  • 12 nos. Green chillies Chopped
  • 12 cloves Garlic(Crushed)
  • A big piece Ginger(Crushed)
  • Few Curry leaves
  • 1/4 Cup Mint leaves(Pudina)
  • 1 Cup Coriander leaves
  • Rusk powder As reqd
  • Sunflower Oil As reqd
  • 2 tsp Garam Masala
  • 2 nos. Eggs (Beaten with little salt and pepper)

Instructions
 

  • For preparing Egg Kebab, first boil the eggs.

  • Boil the potatoes and mash them.
  • Heat oil in a pan and add onion along with chopped green chillies and saute well. Then, add curry leaves, ginger, garlic, turmeric powder and garam masala. Saute well.

  • Add mashed potatoes, mint and coriander leaves and mix well. Check for salt and add if required. Remove from flame.

  • Meanwhile, cut each egg into four pieces lengthwise.

  • Pluck a round from the prepared potato mixture and flatten it slightly in your palm.
  • Pack each egg slice in the above potato mixture and shape in the form of 'Unnakaya'.
  • Dip the Egg Kebab in the beaten egg mixture mixed with little salt and pepper.

  • Roll the Egg Kebabs in rusk powder.

  • Heat enough oil in a pan and fry Egg Kebab to a golden brown color.

  • Egg Kebab is ready. Relish hot with sauce.
