Wash and soak rice for 15 - 20 mins.
Cut coriander leaves, green chillies, garlic and grind it with ginger into a smooth paste.
Heat oil in a pressure pan.
Add cumin seeds and curry leaves and allow the cumin seeds to splutter.
Add butter and allow it to melt.
Add onion and fry for a minute or 2.
Add ground paste and stir fry, until the raw smell is gone.
Add vegetables and saute for a minute.
Add rice and fry till dry.
Add 2 3/4cups of water, salt and bring to a boil.
Cover and cook upto 1 whistle or for 8 mins after putting the weight whichever is earlier.
Transfer the pulao to a serving disha and garnish with coriander leaves.
Add cashews, if desired.
