Green Pulao

Easy to make green pulao

Ingredients
  

  • 1 1/2 cups Basmathi rice
  • 1 small Coriander leaves
  • 4 - Green chillies
  • 1 tbsp Ginger grated
  • 2 nos Garlic pods
  • 1 no Onion cut thin and long
  • 1 no Capsicum
  • 1 no Carrot shredded
  • 1 tbsp Butter
  • 1 tbsp Oil
  • Salt As reqd
  • 1 tsp Cumin seeds
  • Curry leaves A few

Instructions
 

  • Wash and soak rice for 15 - 20 mins.
  • Cut coriander leaves, green chillies, garlic and grind it with ginger into a smooth paste.
  • Heat oil in a pressure pan.
  • Add cumin seeds and curry leaves and allow the cumin seeds to splutter.
  • Add butter and allow it to melt.
  • Add onion and fry for a minute or 2.
  • Add ground paste and stir fry, until the raw smell is gone.
  • Add vegetables and saute for a minute.
  • Add rice and fry till dry.
  • Add 2 3/4cups of water, salt and bring to a boil.
  • Cover and cook upto 1 whistle or for 8 mins after putting the weight whichever is earlier.
  • Transfer the pulao to a serving disha and garnish with coriander leaves.
  • Add cashews, if desired.
