Kerala Egg Sandwich
Less spicy, you may enjoy with tea, children will love it

- 5 nos Eggs hardboiled
- 3 nos Onion
- 2 nos Green chillies
- Curry leaves A few
- 2 tbsp Oil
- 3 tbsp Allpurpose flour Maida
- Salt As reqd
Cut each egg into two halves and take out the yolk with a spoon without breaking the white part.
Chop onions and green chillies into small pieces.
Saute onion and green chillies in oil for 5 mins.
Add curry leaves.
Add salt.
Add the yolk and saute it for 2 mins.
When cool, make small balls and fill this inside the half of the egg.
Make a thick batter of maida with water and salt.
Dip each egg piece in maida batter.
Take some oil in a frying pan.
Fry both the sides of the egg.
:- Be careful when you add salt since you add it twice i.e.,in the filling and also in the batter.
