Take a food processor or blender and add chicken, red chilly powder, fennel seed powder, dried red chilly, coriander leaves, pepper powder and salt as required.
Grind it to make a coarse paste.
Heat butter in a pan.
Add the ground chicken.
Keep stirring and cook for 10-15 minutes on medium flame.
For preparing mayonnaise, combine eggs, vinegar, garlic and salt in a food processor and pulse until blended.
Pour oil in 3-4 batches and blend it until smooth.
Take half portion of mayonnaise from that and keep aside. Add red chilly powder to the remaining mayonnaise and blend for a second. Keep the colored and plain mayonnaise aside.
Fry the potatoes in sunflower oil until crisp.
Add the fries into a serving plate.
Top it with cooked chicken.
Spread the two types of mayonnaise on top of it and serve immediately.
