Mixed Vegetable With Sorrel(Gongura)

Ingredients
  

  • 4 cups Sorrel leaves
  • 100 g Egg plant Brinjal
  • 100 g Lady's finger Okra
  • 100 g Bottle gourd pieces Padavalanga
  • 2 cups Drum stick pieces Muringakka
  • 2 nos Radish cut into small pieces
  • 2 nos Carrots diced
  • 1 cup Red gram dal Thuvara parippu
  • 1 cup Onions chopped
  • Ginger garlic paste - 2 tsp
  • 3 nos Dry Red chillies
  • 6 nos Green chillies split
  • 1 tsp Coriander powder
  • 150 ml Refined oil
  • Salt As reqd
  • 1/2 cup Tamarind extract

Instructions
 

  • Cut all the vegetables into medium sized pieces.
  • Cook the red gram in a pressure cooker until smooth.
  • Put a deep bottomed vessel on the stove, add oil and heat. Add onion pieces, whole red chillies, green chillies and ginger-garlic paste . Fry until onions turn brown.
  • Add the sorrel leaves also and fry until the leaves turn dark brown. Now add the cooked red gram and mix well.
  • Add the vegetable pieces, tamarind extract, coriander powder, enough salt, water and simmer in medium flame until the vegetables are well cooked.
  • Serve hot with rice.
