Palak Cutlet, also known as Palak Tikki, is a savory and nutritious snack made primarily from spinach (palak) and a variety of spices and other ingredients.
Heat little oil in a pan and saute ginger-garlic paste and onion. Add chopped palak and saute until palak shrinks. Put off the flame, cool and grind the mixture to a fine paste.
Meanwhile, boil and mash the potato.
In a bowl add palak paste, coriander leaves, mashed potato, cauliflower, capsicum, baby corn, required salt and chat masala.
Mix the mixture well.
Shape into round patties or cutlets.
Dust with bread crumbs.
Heat oil and deep fry the cutlets well to a golden brown color.
