Pavakka Thoran | Bitter Gourd Stir Fry

2 Nos. Bitter gourd/Pavakka cut into small pieces 4 Nos. Green chillies 1/4 Tsp Turmeric powder 1/2 Cup Coconut grated Curry leaves Few 1 Tsp Mustard seeds Salt As reqd 2 Tbsp Oil 4 Nos. Shallots
Wash the bitter gourd and slice it open. Discard the seeds and pith. Slice the bitter gourd into thin pieces.
Heat oil in a pan, splutter mustard seeds and add chopped shallots and curry leaves. Saute for 5 minutes.
When it turns light brown in colour, add turmeric powder and salt. Stir in chopped pavakka pieces into the oil and mix well.
Grind grated coconut and green chillies into a coarse mixture and add to the bitter gourd. Do not stir. Close with a lid and cook in low flame,
After a few minutes, remove lid and combine well. Cook for another 2 minutes and remove pan from flame.
Serve the delicious thoran with rice.
