Grind together coconut, curd, turmeric powder and ginger into a smooth paste.
Cook pineapple pieces along with little water, green chillies, salt and turmeric powder.
Once it is cooked, add the ground mixture.
Heat it through.
:- Do not bring it to boil.
Remove it from the flame.
Heat oil in a pan or a kadai.
Splutter mustard seeds followed by fenugreek seeds.
Add red chillies, ginger pieces and curry leaves.
Pour the above seasoning into the pineapple curry.
:- Serve with rice.
