Poached Chicken With Mushroom And Tomato Gravy

Ingredients
  

  • 1 no Whole chicken
  • 2 nos Onion chopped
  • 1 bulb Garlic roughly chopped
  • 3 nos Green chillies chopped
  • 4 cloves Garlic chopped
  • Parsley chopped
  • 1 cup Cheese grated
  • 2 cups Mushroom chopped
  • 1 can Canned tomato
  • 2 tsp Cayenne
  • 1 cup Carrotot sliced
  • 1 cup Potato sliced
  • Olive oil As reqd
  • 1 tbsp Butter
  • Thyme As reqd
  • Rosemary As reqd
  • 1 tsp Oregano
  • 2 cups Red wine
  • Pepper As reqd
  • Salt As reqd

Instructions
 

  • For preparing poached chicken with mushroom and tomato gravy, first clean the chicken and lightly flatten it.
  • Marinate with pepper and salt.
  • In a pan, add olive oil and butter. Add the whole bulb of chopped garlic.
  • Keep chicken in it and fry each side for 5 minutes.
  • Add thyme, rosemary and oregano.
  • Add wine and mix well.
  • Turn sides and cook. Add the carrot and potato.
  • Add water and cover it. Cook for 1 1/2 hour/until chicken is done.
  • In another pan, drizzle olive oil, add chopped garlic cloves, onion and fry for few minutes.
  • Add mushrooms, canned tomato and cook.
  • Add cayenne, little pepper and salt.
  • When chicken is done, cut in the middle and add the tomato gravy in it and serve hot.
