Sadhya Sambar is a traditional way of cooking sambar with loads of vegetables and spices. For Onam sadya, you may need to cook so many recipes for the feast. I am sure this easy sambar recipe will help you save lots of time when compared with varutharacha sambar with spices and coconut. Of course taste may not be equal to the traditional Kerala sambar still you can give a try. The vegetables most commonly used for preparing sambar are potato, winter melon, onion, carrot, cucumber, brinjal, snake gourd, drum stick, tomato and amara payar/hyacinth bean. You could even add vegetables like pumpkin, okra, elephant yam, raw banana, tindora/kovakka, beans etc,
Put tamarind in a little water and extract the juice.
Heat up a vessel.
Boil all the vegetables in it except tomato.
When done, add the boiled dal, salt and tomato.
When it boils further, add tamarind juice followed by sambar powder.
:- Take some water from the boiling curry and add it into the sambar powder and then add that into the boiling curry.
Allow it to boil again.
Add coriander leaves and curry leaves.
Heat oil in a pan or a kadai.
Splutter mustard seeds and saute red chillies and curry leaves.
Add the above seasoning into the above sambar.
:- Sambar is ready.
:- Serve sambar hot with rice.
