Scrambled Egg With Vegetables

Ingredients
  

  • 2 nos Eggs
  • 2 - Garlic pods big
  • 2 nos Carrots medium
  • 2 nos Potato medium
  • 1 no Capsicum medium
  • 2 tsp Crushed red chillies
  • 1 tsp Oil
  • Salt As reqd
  • 4 - Coriander leaves

Instructions
 

  • Heat some oil in a pan.
  • Add the sliced garlic or garlic paste when the oil is warm.
  • :- All the vegetables should be cut into small pieces like you would for a cutlet.
  • Add crushed red pepper.
  • Add carrots followed by salt and then let the carrots cook without water.
  • After some time, add the cut capsicum and potato and leave it aside.
  • :- This itself is a dish(Veggie dish).
  • Heat some oil in another pan.
  • Add the vegetables and coriander leaves and the eggs with a little salt and mix them as you would for making scrambled eggs.
  • :- Serve hot with rice or with ghee rice.
