Instructions
Heat some oil in a pan.
Add the sliced garlic or garlic paste when the oil is warm.
:- All the vegetables should be cut into small pieces like you would for a cutlet.
Add crushed red pepper.
Add carrots followed by salt and then let the carrots cook without water.
After some time, add the cut capsicum and potato and leave it aside.
:- This itself is a dish(Veggie dish).
Heat some oil in another pan.
Add the vegetables and coriander leaves and the eggs with a little salt and mix them as you would for making scrambled eggs.
:- Serve hot with rice or with ghee rice.
