Special Fried Rice

Tasty Chinese dish with rice, egg and vegetables

Ingredients
  

  • 800 gm Cooked basmati rice
  • 1 no Green capsicum
  • 1 no Red capsicum
  • 100 gm Bamboo shoots
  • 2 nos Eggs
  • 2 nos Spring onions finely chopped
  • 1/2 cup Shredded Chicken
  • 2 tsp Salt
  • 4 tbsp Oil
  • 1 tbsp Soy sauce

Instructions
 

  • Cut the green and red peppers and the bamboo shoots into small cubes.
  • Lightly beat the eggs with about half of the spring onions and a pinch of salt.
  • Heat about 2 tbsp of oil in a kadai or a pan.
  • Add the beaten eggs and scramble until set. Keep it aside.
  • Cook chicken with some water,pepper powder and salt till it become tender. Shred into small pieces and keep it aside
  • Heat the remaining oil.
  • Add the rest of the spring onions followed by all the vegetables and chicken and stir-fry, until each piece is covered with oil.
  • Add the cooked rice along with salt and stir to separate each grain of rice.
  • Finally, add the soy sauce and scrambled eggs.
  • Mix everything together.
  • :- Serve hot.
