Special Fried Rice
Tasty Chinese dish with rice, egg and vegetables

- 800 gm Cooked basmati rice
- 1 no Green capsicum
- 1 no Red capsicum
- 100 gm Bamboo shoots
- 2 nos Eggs
- 2 nos Spring onions finely chopped
- 1/2 cup Shredded Chicken
- 2 tsp Salt
- 4 tbsp Oil
- 1 tbsp Soy sauce
Cut the green and red peppers and the bamboo shoots into small cubes.
Lightly beat the eggs with about half of the spring onions and a pinch of salt.
Heat about 2 tbsp of oil in a kadai or a pan.
Add the beaten eggs and scramble until set. Keep it aside.
Cook chicken with some water,pepper powder and salt till it become tender. Shred into small pieces and keep it aside
Heat the remaining oil.
Add the rest of the spring onions followed by all the vegetables and chicken and stir-fry, until each piece is covered with oil.
Add the cooked rice along with salt and stir to separate each grain of rice.
Finally, add the soy sauce and scrambled eggs.
Mix everything together.
