Instructions
Soak raw rice in water for 3 hours. Spread the rice in a paper towel to dry.
Grind the rice coarsely.
Break Jaggery to pieces.
Mix jaggery with 1 cup of water and melt. Filter the jaggery liquid.
Pour the jaggery liquid to the rice and mix it well.
Grind 4 Ripe Bananas (Palayam Kodan).
Grind cardamom seeds (without skin) with little sugar.
Mix the banana and cardamom to the rice and keep it for 1 hour
Fry the coconut in ghee.
Add the fried coconut pieces to the batter and mix well. Keep the batter overnight in the refrigerator.
Heat unniappam pan and pour oil or ghee.
Once oil is hot, pour the batter in each hole.
Turn the side after few minutes. Turn it back again after few minutes.
